Ingredients
- 2 c. carrots, mashed
- 1 c. cracker crumbs
- 1 c. milk
- 3/4 c. Cheddar cheese, grated
- 1 c. soft butter
- 1/4 c. onion
- 1 tsp. salt
- 1/4 tsp. pepper
- 1/8 tsp. cayenne
- 3 eggs, beaten
Method
- Combine first nine ingredients; mix well.
- Beat the eggs puffy, fold into carrot mixture.
- Pour into a well-greased 1 1/2-quart ring mold.
- Bake at 350° for 40 to 45 minutes.
- Turn out onto a warm platter.
- Fill center with warmed sweet English peas. Garnish outside ring with parsley.
- Serves 8 to 12.
