Ingredients
- 1 (2 1/2 to 3 lb.) broiler-fryer
- 2 qt. water
- 2 tsp. salt
- 1/2 tsp. pepper
- 2 c. all-purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 3 Tbsp. shortening
- 3/4 c. buttermilk
Method
- Place chicken in a Dutch oven.
- Add water and 2 teaspoons salt.
- Bring to a boil.
- Cover, reduce heat and simmer 1 hour or until tender.
- Remove chicken from broth and cool.
- Bone chicken, and cut meat into bite-size pieces; set aside.
- Bring broth to a boil; add pepper.
