Ingredients

  • 1 c. evaporated milk (use skimmed milk for heart-smart)
  • 2 Tbsp. vegetable oil
  • 1 Tbsp. vinegar
  • 1 c. uncooked oats
  • 1 c. all-purpose flour
  • 1 c. brown sugar, firmly packed
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1 c. raisins, more or less
  • 1 c. nuts (unchopped), more or less

Method

  • In
  • large
  • bowl, mix together well the milk, oil and vinegar.
  • Add the oats, flour, sugar, soda and salt and again, mix well.
  • Dredge raisins and nuts in a bit of flour and stir in last.
  • Pour
  • into
  • a sprayed or greased and floured (I use Baker's Joy)
  • x 3-inch loaf pan or 2 (7 x 4 x 2-inch) loaf pans. Bake at 350° for about 50 minutes, or until center tests done. (Aunt Eva lived in Oklahoma!)
