- 1-1/2 cups sifted flour
- 1/2 tsp baking powder
- 3/4 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/3 cup sugar
- 1/3 cup vegetable oil
- 1/2 cup molasses
- 2 eggs
- 1-1/2 cups rolled oats
- 1 cup raisins
Method
- In a mixing bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger and sugar.
- Add vegetable oil, molasses, eggs and rolled oats.
- Mix until blended.
- Stir in raisins.
- Dough will be soft.
- Drop batter by heaping teaspoons onto nonstick baking sheet.
- Bake at 350 for 12 to 15 minutes.
- Remove from oven and let stand 1 minute.
- Remove from baking sheet and cool. Yield: 48 cookies.
