Ingredients

  • 1/2 c. flour
  • 1/2 c. quick cooking oats
  • 3/4 c. buttermilk
  • 1/4 c. milk
  • 1 Tbsp. sugar
  • 1 egg
  • 2 Tbsp. vegetable oil
  • 1 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt

Method

  • Beat all ingredients with hand mixer until smooth.
  • (For thinner pancakes, stir in 2 to 4 tablespoons additional milk.) Grease heated griddle with shortening.
  • (Pastry brush can be used for this.)
  • To check if griddle or pan is hot enough, sprinkle few drops of water.
  • If it bubbles and skittles around, it's ready. Use 1/4 cup batter for each pancake.
  • Cook until golden on both sides.
  • Makes 10 to 12.
