Ingredients
- 1/2 c. flour
- 1/2 c. quick cooking oats
- 3/4 c. buttermilk
- 1/4 c. milk
- 1 Tbsp. sugar
- 1 egg
- 2 Tbsp. vegetable oil
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
Method
- Beat all ingredients with hand mixer until smooth.
- (For thinner pancakes, stir in 2 to 4 tablespoons additional milk.) Grease heated griddle with shortening.
- (Pastry brush can be used for this.)
- To check if griddle or pan is hot enough, sprinkle few drops of water.
- If it bubbles and skittles around, it's ready. Use 1/4 cup batter for each pancake.
- Cook until golden on both sides.
- Makes 10 to 12.
