Ingredients

  • 2 c. boiling water
  • 2 c. large flake oatmeal
  • 1 1/2 c. brown sugar
  • 1 c. vegetable oil
  • 4 eggs
  • 1 tsp. vanilla
  • 1 tsp. salt
  • 2 tsp. baking soda
  • 3 c. flour (you may use 2 c. all-purpose flour and 1 c. whole wheat flour)
  • 1 c. dates, raisins, coconut or chocolate chips can be added

Method

  • In large bowl, pour boiling water over oatmeal.
  • Let stand 20 minutes.
  • Vigorously beat in the remaining ingredients.
  • Fill greased muffin pans 3/4 full.
  • Bake at 350° for 20 to 25 minutes or until done.
  • Makes about 30 medium to large size muffins.
