Ingredients
- 2 c. boiling water
- 2 c. large flake oatmeal
- 1 1/2 c. brown sugar
- 1 c. vegetable oil
- 4 eggs
- 1 tsp. vanilla
- 1 tsp. salt
- 2 tsp. baking soda
- 3 c. flour (you may use 2 c. all-purpose flour and 1 c. whole wheat flour)
- 1 c. dates, raisins, coconut or chocolate chips can be added
Method
- In large bowl, pour boiling water over oatmeal.
- Let stand 20 minutes.
- Vigorously beat in the remaining ingredients.
- Fill greased muffin pans 3/4 full.
- Bake at 350° for 20 to 25 minutes or until done.
- Makes about 30 medium to large size muffins.
