Ingredients

  • 1 c. quick oats
  • 1 1/3 c. boiling water
  • 1/2 c. butter or oleo
  • 1 c. brown sugar
  • 1 c. white sugar
  • 2 eggs
  • 1 1/3 c. flour
  • 1/2 tsp. salt
  • 1/2 tsp. soda
  • 1/2 tsp. cinnamon

Method

  • Add oats to boiling water; let stand 20 minutes.
  • Cream shortening and sugar; add eggs one at a time, beating well after each addition.
  • Add the oats mixture and sifted dry ingredients. Mix thoroughly.
  • Bake in a greased loaf or square pan for 30 to 45 minutes in a 350° oven.
  • Pour on topping and put in oven for 5 minutes.
