Ingredients
- 1 1/2 c. all-purpose flour
- 3/4 tsp. salt
- 2 eggs
- 1/3 c. vegetable oil
- 1 1/2 c. chopped walnuts
- 1 1/2 tsp. baking soda
- 1/2 tsp. ground nutmeg
- 1 c. plus 2 Tbsp. sugar
- 2 c. peeled and diced apples
- 3/4 c. flaked coconut
Method
- In a large bowl, combine the flour, baking soda and nutmeg. In another bowl, beat eggs; add sugar and oil.
- Mix well.
- Stir in apples, nuts and coconut.
- Stir in dry ingredients, just until moistened.
