Ingredients
- 1 lb. butter
- 2 c. sugar
- 1/4 tsp. salt
- 8 oz. (1/2 lb.) candied pineapple
- 1/2 lb. candied cherries
- 6 eggs
- 1 tsp. baking powder
- 4 c. plain flour
- 1 lb. pecans
- 2 tsp. vanilla
Method
- Cream butter and sugar.
- Add beaten eggs.
- Add 3 cups flour, baking powder and salt.
- Add vanilla.
- Mix remaining cup flour with fruit and nuts.
- Stir into batter.
- Pour in greased and paper-lined tube pan.
- Bake at 250° for 3 hours.
- Let cool in pan.
- My family prefers this to regular fruitcake.
