- 6 zucchini (2 c. diced pulp)
- 1/2 lb. ground sausage
- 1/2 lb. ground beef
- 1/3 c. chopped onion
- 1/2 tsp. minced garlic
- 1 egg, slightly beaten
- 3/4 c. soft bread crumbs
- 1/3 c. grated Parmesan cheese
- 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 tsp. oil
- 3 Tbsp. chopped parsley
- 1 Tbsp. pimento
Method
- Trim off ends of zucchini and cut in half lengthwise.
- Scoop out centers.
- Place shells in shallow pan. Dice pulp; set aside. Brown meat, garlic and onion.
- Stir in pulp, parsley, salt, pepper, Parmesan cheese, bread crumbs and egg.
- Spoon into shells and top with additional Parmesan cheese.
- Bake in 350° oven for 30 minutes or until brown.
- An easy way to use up zucchini.
