Ingredients

  • 6 zucchini (2 c. diced pulp)
  • 1/2 lb. ground sausage
  • 1/2 lb. ground beef
  • 1/3 c. chopped onion
  • 1/2 tsp. minced garlic
  • 1 egg, slightly beaten
  • 3/4 c. soft bread crumbs
  • 1/3 c. grated Parmesan cheese
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 tsp. oil
  • 3 Tbsp. chopped parsley
  • 1 Tbsp. pimento

Method

  • Trim off ends of zucchini and cut in half lengthwise.
  • Scoop out centers.
  • Place shells in shallow pan. Dice pulp; set aside. Brown meat, garlic and onion.
  • Stir in pulp, parsley, salt, pepper, Parmesan cheese, bread crumbs and egg.
  • Spoon into shells and top with additional Parmesan cheese.
  • Bake in 350° oven for 30 minutes or until brown.
  • An easy way to use up zucchini.
