Ingredients

  • 4 doz. mussels, washed and debearded
  • 2 Tbsp. olive oil
  • 6 cloves garlic, minced
  • 1 Bermuda onion, julienned
  • 1 medium red pepper, julienned
  • 1 yellow pepper, julienned
  • 2 jalapeno peppers, seeded and sliced
  • 4 Red Bliss potatoes, thin sliced
  • 2 c. clam juice
  • 2 tsp. curry powder
  • 1/4 c. parsley, chopped

Method

  • Preheat oven to 350°.
  • In a large bowl, toss the hot spaghetti with the olive oil.
  • In a small bowl, combine the eggs and the 1/2 cup of Parmesan cheese.
  • Stir into the spaghetti.
