Ingredients

  • 4 to 6 potatoes, peeled and diced
  • 1 small onion, diced
  • 2 to 3 stalks celery, diced
  • water to cover vegetables
  • 1/2 tsp. celery seed
  • salt and pepper to taste
  • 1 (12 oz.) can condensed milk (or whole milk)
  • 1 Tbsp. flour or cornstarch
  • 3 Tbsp. margarine or butter

Method

  • Put vegetables in a large pot.
  • Add water and spices.
  • Bring to a boil; then cook on medium heat until tender.
  • Mix the flour or cornstarch with a small amount of water until smooth; then add to the pot, stirring until well mixed.
  • (If you use whole milk, you may need a little more flour or cornstarch.)
  • Add milk and continue to stir.
  • Continue to cook on low heat for about 5 minutes, until milk is well heated (do not boil).
  • Add margarine or butter and stir.
