Ingredients

  • eggplant
  • 1 medium onion, cut into large pieces
  • 2 small garlic, cut
  • 1 (6 oz.) can tomato sauce
  • 3/4 lb. hamburg
  • wide noodles, macaroni elbows or rice

Method

  • Cut eggplant into 1/2 lengthwise; cut halves lengthwise.
  • Peel the 4 quarters.
  • Remove larger seeds.
  • Slice in 1/2-inch slices. Saute onion and garlic.
  • Saute eggplant slices.
  • Add tomato sauce. Fry hamburg.
  • Add all together but be sure to drain off hamburg grease.
  • Serve over wide noodles, macaroni elbows or rice.
  • Add favorite seasonings.
