Ingredients
- eggplant
- 1 medium onion, cut into large pieces
- 2 small garlic, cut
- 1 (6 oz.) can tomato sauce
- 3/4 lb. hamburg
- wide noodles, macaroni elbows or rice
Method
- Cut eggplant into 1/2 lengthwise; cut halves lengthwise.
- Peel the 4 quarters.
- Remove larger seeds.
- Slice in 1/2-inch slices. Saute onion and garlic.
- Saute eggplant slices.
- Add tomato sauce. Fry hamburg.
- Add all together but be sure to drain off hamburg grease.
- Serve over wide noodles, macaroni elbows or rice.
- Add favorite seasonings.
