Ingredients

  • 3/4 c. sugar
  • 1/4 c. shortening
  • 1 egg
  • 1 c. mashed ripe bananas
  • 2 c. sifted flour
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 1 tsp. soda
  • 5 Tbsp. sour milk
  • 1 c. chopped Macadamia nuts

Method

  • Mix sugar, shortening and egg.
  • Add mashed bananas.
  • Combine flour, baking powder and salt.
  • Mix together soda and sour milk (it will foam up).
  • Add to banana mixture.
  • Add nuts and dry ingredients until blended.
  • Put in greased and floured pans.
  • Makes 1 large loaf or 2 small loaves or 4 soup cans.
  • Bake at 375° for 55 minutes for large loaf, 30 to 35 minutes for small loaves.
