Ingredients

  • 3 c. plain flour (approximately)
  • 3/4 c. cold water
  • 1 tsp. salt
  • broth (from hen)

Method

  • Boil hen to make good rich broth.
  • Mix ingredients together and work it together until it can be rolled out thin.
  • Cut dough into small pieces (approximately 1 1/2 x 2-inches).
  • Have broth in a rolling boil and drop dumplings in broth, one at a time, shaking boiler frequently; do not stir.
  • If broth is hot enough dumplings should be done in 4 or 5 minutes.
  • Put deboned chicken pieces in broth before adding dumplings to broth.
  • This will feed family of 6 to 8.
