Ingredients

  • 1 (9 inch) unbaked pie shells
  • 12 cup butter
  • 1 cup sugar
  • 2 eggs
  • 1 12 cups shredded coconut
  • 1 tablespoon lemon juice
  • 14 cup milk

Method

  • Cream the butter and the sugar.
  • Add the eggs, one at a time, and beat in well.
  • Add the lemon juice, then the milk, and finally the coconut and blend all in well.
  • Pour the mixture into the unbaked pie crust.
  • Preheat oven to 450 F and place pie in oven for 10 minutes, then reduce the heat to 350 F and bake for a further 25-30 minutes, or until brown.
