Ingredients

  • 2 ripe avocados, peeled and chopped
  • 2 Tbs. fresh lemon juice
  • 2 cloves garlic, minced
  • 1/2 tsp. salt
  • 2 Tbs. chopped cilantro
  • 24 large corn tortilla chips
  • 34 cup canned vegetarian refried beans
  • 6 oz. shredded Jalapeno Jack cheese

Method

  • Preheat oven to 450F.
  • In medium bowl, combine avocados, lemon juice, garlic and salt; mash with fork.
  • Set guacamole aside.
  • Spread each chip with thin layer of beans.
  • Arrange on baking sheet and sprinkle with cheese.
  • Bake until cheese is melted, about 5 minutes.
  • Serve with guacamole.
