Ingredients

  • 1 qt. beef broth (bouillon okay)
  • 2 lb. ground beef
  • 1/2 c. chopped onion
  • 4 Tbsp. chili powder
  • 1 tsp. ground cinnamon
  • 1 tsp. ground cumin
  • 1/2 tsp. salt
  • 1/4 tsp. ground allspice
  • 1/4 tsp. ground cloves
  • 1/16 tsp. ground red pepper
  • 1 bay leaf
  • 15 oz. can tomato sauce
  • 2 Tbsp. vinegar
  • 1/2 oz. (1/2 sq.) unsweetened chocolate
  • tomato paste to thicken
  • 1 to 2 cans kidney beans, drained (if desired)

Method

  • Boil beef broth in 4-quart pot.
  • Slowly add beef and separate into small pieces.
  • Cover and simmer for 30 minutes.
  • Add everything else except tomato paste and beans.
  • Cover and simmer for 1 hour, stirring occasionally.
  • Thicken with tomato paste as needed.
  • Add beans if desired.
  • Refrigerate overnight.
  • Serves 6.
