Ingredients

  • 1 pkg. frozen chopped broccoli
  • 3/4 c. uncooked rice
  • 1 1/2 c. water (cooks rice)
  • 1/2 medium onion, chopped
  • 3/4 stick margarine or butter
  • 1 can cream of mushroom soup
  • 1/2 soup can milk
  • 1 c. sharp Cheddar cheese, grated

Method

  • Cook and drain broccoli.
  • Add to cooked rice.
  • Saute onion in butter (or margarine).
  • Mix onions, balance of butter from saute and cheese (3/4 cup) to broccoli rice mixture.
  • Sprinkle with remaining cheese.
  • Bake at 350° for abut 20 minutes.
  • If prepared the day before, bake 45 minutes to 1 hour.
