- 2 Tbsp. butter
- 1 Tbsp. flour
- 2 onions, finely chopped
- 2 lb. peeled shrimp
- 6 tomatoes or 1 3/4 c. canned tomatoes
- 1 c. water
- 1 green pepper, diced
- 1 tsp. fresh thyme or 1/2 tsp. dried thyme
- 2 tsp. chopped parsley
- 1 bay leaf or 1/2 tsp. powdered bay leaves
- 1/2 tsp. garlic salt
- salt and pepper to taste
Method
- Melt butter.
- Add flour gradually; cook to a light brown.
- Add onions; saute until golden.
- Add shrimp; mix well.
- Let cool slightly.
- Add tomatoes, water, green pepper and seasoning.
- Cook, stirring frequently, for 20 minutes.
- Serve over rice.
- Serves 8.
