Ingredients

  • 2 Tbsp. butter
  • 1 Tbsp. flour
  • 2 onions, finely chopped
  • 2 lb. peeled shrimp
  • 6 tomatoes or 1 3/4 c. canned tomatoes
  • 1 c. water
  • 1 green pepper, diced
  • 1 tsp. fresh thyme or 1/2 tsp. dried thyme
  • 2 tsp. chopped parsley
  • 1 bay leaf or 1/2 tsp. powdered bay leaves
  • 1/2 tsp. garlic salt
  • salt and pepper to taste

Method

  • Melt butter.
  • Add flour gradually; cook to a light brown.
  • Add onions; saute until golden.
  • Add shrimp; mix well.
  • Let cool slightly.
  • Add tomatoes, water, green pepper and seasoning.
  • Cook, stirring frequently, for 20 minutes.
  • Serve over rice.
  • Serves 8.
