Ingredients

  • 1 tbl. olive oil
  • 1 med. onion-chopped
  • 5 cloves garlic-minced
  • 1 tbl.cumin
  • 1/2 tsp.cayenne pepper
  • 1 jalapena pepper-minced
  • 1 lb. black turtle beans-soaked overnight
  • 8 c. vegetable broth
  • salt and pepper to taste
  • chopped scallions-optional

Method

  • Heat oil in a large pot.Add onion and garlic and cook until onion is translucent.Add spices and cook through.Add jalapeno,drained beans and broth.Bring to a boil, then reduce to a simmer.Cook covered about 1 1/2 hours or until beans are tender.
