- 1 1/2 cups flour
- 1 cup brown sugar
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon ginger powder
- 1/4 teaspoon salt
- 1 cup finely grated carrot
- 3/4 cup water
- 1/2 cup melted butter or 1/2 cup vegetable oil
- 2 teaspoons vanilla essence
- 1 tablespoon vinegar
Method
- Preheat oven to 350 degrees C (175 degrees F).
- Mix the dry ingredients and spices until well blended.
- Add grated carrots. Stir until thoroughly blended.
- Add wet ingredients. Mix thoroughly.
- Bake in preheated oven for about 30 to 45 minutes, or until toothpick inserted comes out clean.
