Ingredients

  • 1 tablespoon oil
  • 2.5 cm (1 inch) piece fresh galangal, finely sliced
  • 2 garlic cloves, crushed
  • 2 red chillies, finely chopped
  • 200 g (7 oz) button mushrooms, halved
  • 100 g (3 1/2 oz) oyster mushrooms, halved
  • 1 tablespoon fish sauce
  • 1 teaspoon soy sauce
  • 1 very large handful Thai basil, roughly chopped

Method

1. Heat the oil in a wok and stir-fry the galangal, garlic and chilli for 2 minutes. Add the button mushrooms and stir-fry for 2 minutes. Add the oyster mushrooms and stirfry for 30 seconds, until softened.

2. Add the fish sauce, soy sauce and chopped basil and toss well. Serve immediately.
