Ingredients

  • 1 lb. fresh mushrooms (whole)
  • margarine
  • 1/2 c. water
  • 2 bouillon cubes
  • 1/2 stick margarine
  • 2 Tbsp. flour
  • 1/2 pt. light cream
  • 1/2 c. bread crumbs
  • 1/2 c. Parmesan cheese

Method

  • Saute mushrooms in margarine.
  • In separate pot, heat and dissolve bouillon cubes in water and set aside.
  • Melt 1/2 stick margarine and sprinkle flour over.
  • Add cream to butter/flour mixture.
  • Add bouillon mix to this and add mushrooms.
  • Place everything in buttered casserole (large enough to leave mushrooms in a single layer).
  • Top with mixture of bread crumbs and cheese. Bake at 350° for 30 minutes.
  • Can do ahead.
  • Serves 6. To double recipe, just double mushrooms.
