Ingredients

  • 1 1/2 c. whole wheat flour
  • 1 c. all-purpose flour
  • 1 c. rolled oats (old-fashioned)
  • 1/2 c. yellow cornmeal
  • 1 Tbsp. baking powder
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 3/4 c. cold, unsalted butter, cut into pieces
  • 4 eggs
  • 4 c. buttermilk
  • 1/2 c. honey
  • 1 c. chopped pecans (optional)
  • butter

Method

  • Process flours, oats, cornmeal, baking powder, baking soda and salt until well blended.
  • Add butter and process until mixture resembles coarse meal.
  • Beat eggs and buttermilk together.
  • Beat in honey.
  • Stir in flour mixture and optional nuts.
  • Heat griddle and melt butter to coat.
  • Ladle the batter to make pancakes and cook until golden on both sides.
  • Serve with butter and syrup or yogurt and fresh fruit.
  • Serves 6 to 8.
