Ingredients

  • 2-3 pounds baby red potatoes boil until just slightly tender
  • 1 boiled egg
  • DICE:
  • 1/2 onion
  • 1/2 seedless cucumber
  • 1/2 red or yellow pepper
  • 1/4 cup diced white sharp cheddar chees
  • (1/4 crumbled cooked bacon - if desired)
  • set aside
  • IN LARGE MIXING BOWL :
  • 1/2 - 1 CUP Hellman's real mayo
  • 1 tablespoon Lee & perrins Worcestershire sauce
  • 1 tablespoon yellow table mustard
  • 1 tablespoon sweet relish
  • 1 hard boiled egg (diced)
  • 1 teaspoon salt
  • 1 tablespoon fresh ground pepper
  • blend and mix until smooth
  • Cut cooked/chilled potatoes to desired size and blend above ingredients until well mix
  • Wash & dry well 2 cups tender baby spinach - serve cold Mr. Marks Potatoes salad on bed of fresh baby spinach ....yum
