- 2-3 pounds baby red potatoes boil until just slightly tender
- 1 boiled egg
- DICE:
- 1/2 onion
- 1/2 seedless cucumber
- 1/2 red or yellow pepper
- 1/4 cup diced white sharp cheddar chees
- (1/4 crumbled cooked bacon - if desired)
- set aside
- IN LARGE MIXING BOWL :
- 1/2 - 1 CUP Hellman's real mayo
- 1 tablespoon Lee & perrins Worcestershire sauce
- 1 tablespoon yellow table mustard
- 1 tablespoon sweet relish
- 1 hard boiled egg (diced)
- 1 teaspoon salt
- 1 tablespoon fresh ground pepper
- blend and mix until smooth
- Cut cooked/chilled potatoes to desired size and blend above ingredients until well mix
- Wash & dry well 2 cups tender baby spinach - serve cold Mr. Marks Potatoes salad on bed of fresh baby spinach ....yum

- 1 teaspoon salt
- 1 tablespoon fresh ground pepper
