- 2 large eggs
- 1 teaspoon dry mustard
- 12 cup 1% low-fat milk
- 4 slices bread, crumbled
- 2 12 lbs ground beef
- 1 large onion, minced
- 34 teaspoon salt
- 14 teaspoon pepper
- 12 cup minced celery
- 14 cup parsley, chopped
- 12 cup ketchup
- 2 tablespoons brown sugar
- 3 slices American cheese
- 14 teaspoon dry mustard
Method
- Preheat oven to 350 degrees.
- Line roasting pan with aluminum foil; set aside.
- In large bowl whisk eggs with 1 teaspoons.
- mustard, 3/4 teaspoons.
- salt and 1/4 teaspoons.
- pepper until blended.
- Stir in milk and bread crumbs.
- Let stand 5 minutes.
- Add ground beef, onion, celery, and parsley.
- With hands, mix lightly until well blended.
- Turn meat into prepared pan.
- Moisten hands with water, shape into 8x5 inch loaf.
- Bake 1 hour and 15 minutes.
- In small bowl mix glaze ingredients until blended.
- Spread over top of meat loaf.
- Bake 15 minutes longer.
- Cut cheese in half crosswise into triangle.
- Arrange over top of glaze.
- Serve with roasted potatoes.
