Ingredients

  • 2 large eggs
  • 1 teaspoon dry mustard
  • 12 cup 1% low-fat milk
  • 4 slices bread, crumbled
  • 2 12 lbs ground beef
  • 1 large onion, minced
  • 34 teaspoon salt
  • 14 teaspoon pepper
  • 12 cup minced celery
  • 14 cup parsley, chopped
  • 12 cup ketchup
  • 2 tablespoons brown sugar
  • 3 slices American cheese
  • 14 teaspoon dry mustard

Method

  • Preheat oven to 350 degrees.
  • Line roasting pan with aluminum foil; set aside.
  • In large bowl whisk eggs with 1 teaspoons.
  • mustard, 3/4 teaspoons.
  • salt and 1/4 teaspoons.
  • pepper until blended.
  • Stir in milk and bread crumbs.
  • Let stand 5 minutes.
  • Add ground beef, onion, celery, and parsley.
  • With hands, mix lightly until well blended.
  • Turn meat into prepared pan.
  • Moisten hands with water, shape into 8x5 inch loaf.
  • Bake 1 hour and 15 minutes.
  • In small bowl mix glaze ingredients until blended.
  • Spread over top of meat loaf.
  • Bake 15 minutes longer.
  • Cut cheese in half crosswise into triangle.
  • Arrange over top of glaze.
  • Serve with roasted potatoes.
