- 2 lb. candied cherries
- 2 lb. candied pineapple
- 2 lb. chopped pecans
- 1 lb. butter
- 1 1/2 lb. sugar
- 1 1/2 lb. eggs
- 1 1/2 lb. flour
- 1 tsp. vanilla
- 1 tsp. lemon extract
- 1 tsp. almond extract
- 2 tsp. baking powder
- pinch of salt
Method
- Chop fruit and dredge in flour.
- Mix remaining ingredients; add fruit.
- Pour into a 3 x 5-inch oblong pan (or pan of desirable size).
- Bake for 2 to 3 hours at 250°.
- Baking time will depend on size and thickness of pan.
- Yield:
- 11 1/2 cups batter.
