Ingredients
- 1/4 cups Low Fat Milk
- 1/4 cups Water
- 1/4 cups Quinoa, Rinsed
- 1/2 cups Blackberries
- 1/2 cups Peaches, Diced
- 1/8 teaspoons Cinnamon
- 1 teaspoon Honey
- 1 Tablespoon Pecans, Chopped
- Sliced Fresh Fruit For Topping
Method
- Bring milk, water and quinoa to a boil in a saucepan. Reduce heat, cover and simmer for 15 minutes or until all liquid is absorbed and quinoa is soft and translucent. Remove from heat. Let it cool for 5 minutes. Stir in blackberries, peaches, cinnamon and honey.
- Serve in individual bowls and top with additional fresh fruit and pecans. You may want to drizzle a little extra honey on top for some additional sweetness.
