- 4 chicken breasts
- 500g Prunes (French pref.)
- 125ml Olive oil
- 30ml (2 tbsp) pure clear honey
- 1 red onion peeled and sliced
- 3 cloves of garlic, roughly chopped
- 5ml ( 1tsp)ground cumin
- 15ml (1 tbsp)capers
- 5ml ( 1 tsp) freshly grated ginger
- 100g black olives pitted
- 225ml dry white wine
- 30ml ( 2 tbsp) fresh coriander chopped
Method
- Remove skin from chicken & place chicken in ovenproof casserole
- add prunes
- In a jug mix oil, honey, onion, garlic, cumin, capers and ginger
- Pour mixture over chicken & prunes. Mix well. add remaining ingredients and mix
- Leave to marinate for 30min. Place the chicken in a preheated oven 180°C for 45min or until thouroughly cooked
