Ingredients

  • 4 chicken breasts
  • 500g Prunes (French pref.)
  • 125ml Olive oil
  • 30ml (2 tbsp) pure clear honey
  • 1 red onion peeled and sliced
  • 3 cloves of garlic, roughly chopped
  • 5ml ( 1tsp)ground cumin
  • 15ml (1 tbsp)capers
  • 5ml ( 1 tsp) freshly grated ginger
  • 100g black olives pitted
  • 225ml dry white wine
  • 30ml ( 2 tbsp) fresh coriander chopped

Method

  • Remove skin from chicken & place chicken in ovenproof casserole
  • add prunes
  • In a jug mix oil, honey, onion, garlic, cumin, capers and ginger
  • Pour mixture over chicken & prunes. Mix well. add remaining ingredients and mix
  • Leave to marinate for 30min. Place the chicken in a preheated oven 180°C for 45min or until thouroughly cooked
