Ingredients

  • 4 1/2 cups Flour
  • 1/4 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground cloves
  • 1/2 teaspoon Ground ginger
  • 1 cup Light brown sugar, packed
  • 1 cup Butter, soft
  • 1 1/2 cups Light molasses
  • 1/2 teaspoon Cider vinegar
  • 1/4 cup Butter
  • 4 cups Confectioner's sugar
  • 1/4 cup Cream, scalded
  • 1 teaspoon Vanilla

Method

  • Sift dry ingredients together in the bowl of a stand mixer.
  • Add sugar and mix well.
  • Gradually add butter and mix thoroughly.
  • Mix in molasses and vinegar.
  • Turn dough onto a strip of plastic wrap, pat into an oblong, wrap well and chill for several hours or overnight.
  • Preheat oven to 350.
  • Roll out, a small amount at a time, on a floured board to 1/8" thickness. Cut with floured fancy cookie cutters.
  • Place on greased baking sheets and bake 10 minutes, or just until brown.
  • Cool on racks.
  • Blend 4 icing ingredients together until smooth.
  • Divide into small bowls and add food coloring as you wish.
  • Keep plastic wrap over bowls to keep icing from drying out.
