- 1 (1 oz.) pkg. dried black Chinese mushrooms
- 1/4 c. lite soy sauce
- 2 Tbsp. rice vinegar
- 3 cloves garlic, minced
- 1 lb. boneless, skinless chicken breasts
- 1 Tbsp. cornstarch
- 2 Tbsp. peanut or vegetable oil, divided
- 1 (7 oz.) jar straw mushrooms, drained
- 3 green onions, cut into 1-inch pieces
- hot cooked white rice or Chinese egg noodles (optional)
Method
- Place dried mushrooms in a small bowl.
- Cover with warm water. Soak 20 minutes to soften.
- Drain.
- Squeeze out excess water. Discard stems.
- Slice caps.
