Ingredients

  • 1 (1 oz.) pkg. dried black Chinese mushrooms
  • 1/4 c. lite soy sauce
  • 2 Tbsp. rice vinegar
  • 3 cloves garlic, minced
  • 1 lb. boneless, skinless chicken breasts
  • 1 Tbsp. cornstarch
  • 2 Tbsp. peanut or vegetable oil, divided
  • 1 (7 oz.) jar straw mushrooms, drained
  • 3 green onions, cut into 1-inch pieces
  • hot cooked white rice or Chinese egg noodles (optional)

Method

  • Place dried mushrooms in a small bowl.
  • Cover with warm water. Soak 20 minutes to soften.
  • Drain.
  • Squeeze out excess water. Discard stems.
  • Slice caps.
