Ingredients

  • 4 chops (3/4-inch thick)
  • 1 Tbsp. salad oil
  • 1/2 c. vinegar
  • 1/2 c. water
  • 1/2 c. firmly packed brown sugar
  • 1 (8 3/4 oz.) can pineapple tidbits or chunks
  • 3/4 c. ketchup
  • 1 Tbsp. soy sauce
  • 1 tsp. dry mustard

Method

  • Trim chops; heat oil in large skillet over medium heat.
  • Place chops in pan and brown on each side.
  • Drain off fat.
  • Add remaining ingredients to pan.
  • Stir; cover pan tightly and let braise and simmer until chops are tender, approximately 45 minutes.
  • Baste essence in pan over chops occasionally as they cook.
  • Skim off fat and serve sauce over chops.
  • Good with rice and dried noodles.
