Ingredients

  • 1 pkg. active dry yeast
  • 1 c. warm water (105~ to 115~)
  • 2 1/2 c. flour (1/2 wheat and 1/2 unbleached white)
  • 2 to 3 Tbsp. olive oil
  • 1 tsp. sugar (optional)
  • 1 tsp. salt

Method

  • Dissolve yeast in warm water.
  • Should be able to stick your finger in without burning yourself.
  • Stir in remaining ingredients, mixing vigorously.
  • Heat oven to 425°.
  • Shouldn't be sticky.
  • Should be semi-firm, but workable.
  • If sticky, add a little flour.
  • Let set for 5 to 10 minutes (cover bowl).
  • Cook 15 minutes.
  • Cover pizza pan with oil.
  • Sprinkle cornmeal.
  • Press in dough.
