Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 2 cups grated carrots
  • 2 cups chopped pecans
  • 14 cup coconut
  • 3 eggs
  • 1 teaspoon salt
  • 1 12 cups drained pineapple (crushed)
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 2 teaspoons vanilla
  • 12 cup sugar
  • 14 cup butter
  • 14 cup buttermilk
  • 1 tablespoon corn syrup
  • 14 teaspoon baking soda
  • 12 teaspoon vanilla

Method

  • Preheat oven to 325.
  • Mix all cake ingredients together -- bake 1 hour in a 9 x 13 greased pan.
  • Mix topping ingredients in a saucepan.
  • Heat until disolved; drizzle on warm cake.
