Ingredients
- 2 c. raw cranberries
- 2 small oranges
- 1 Tbsp. liquid artificial sweetener
- 1 Tbsp. unflavored gelatin (1 pkg.)
- 1/4 c. cold water
- 1 c. boiling water
Method
- Wash and dry cranberries and oranges.
- Peel the oranges, removing white membrane and seeds, then dice and add the sweetener.
- Put the cranberries and 1 orange peel through the coarse blade of a food chopper.
- Sprinkle the gelatin on the cold water to soften.
- Dissolve the softened gelatin in boiling water and cool.
- Add the cranberries and oranges to the gelatin and pour into molds.
- Chill until firm.
- Unmold.
- Serve on lettuce, if desired.
- Serves 6.
- One serving = 1 fruit exchange.
