Ingredients

  • 2 c. raw cranberries
  • 2 small oranges
  • 1 Tbsp. liquid artificial sweetener
  • 1 Tbsp. unflavored gelatin (1 pkg.)
  • 1/4 c. cold water
  • 1 c. boiling water

Method

  • Wash and dry cranberries and oranges.
  • Peel the oranges, removing white membrane and seeds, then dice and add the sweetener.
  • Put the cranberries and 1 orange peel through the coarse blade of a food chopper.
  • Sprinkle the gelatin on the cold water to soften.
  • Dissolve the softened gelatin in boiling water and cool.
  • Add the cranberries and oranges to the gelatin and pour into molds.
  • Chill until firm.
  • Unmold.
  • Serve on lettuce, if desired.
  • Serves 6.
  • One serving = 1 fruit exchange.
