Ingredients

  • 3 eggs, lightly beaten
  • 1 c. sugar
  • 1 c. lard or shortening
  • 1 c. molasses
  • 2 tsp. soda
  • 1 tsp. ginger
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 2 Tbsp. hot water
  • 5 1/2 c. flour

Method

  • Mix all ingredients except the flour together.
  • Then add the flour to make a stiff dough.
  • Place part of the dough on a lightly floured pastry cloth.
  • Knead dough to desired consistency.
  • Roll out about 1/8-inch thick.
  • Cut with cookie cutter.
  • Place on floured cookie sheet in a 325° oven until firm. Remove from sheet to wire rack immediately. Stores well in airtight container or in freezer.
