Ingredients

  • 1 pound lean ground meat turkey, sirloin and/or chicken total
  • 1 pound ground meat fatty, veal, pork, and/or regular hamburger
  • eggs 4 lg.
  • 1 cup cracker crumbs chunky pieces
  • 2 slices bread cubed
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon ground sage
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon oregano
  • 3 stalks celery finely chopped
  • onion 1 med., chopped
  • 1/2 cup black olives chopped, optional
  • 1/2 cup cooked rice optional
  • potato 1 sm., cubed in small pieces, optional
  • 1/2 cup ketchup

Method

  • In a big bowl combine all ingredients EXCEPT ketchup.
  • Knead until all ingredients are mixed well.
  • Pack loosely into a baking dish.
  • Spread ketchup on top of meatloaf.
  • Bake at 350 degrees for 1 1/2 hours.
  • Spread a little more ketchup on the meatloaf the last 15 minutes, if desired.
  • Lisa's favorite meat combinations are ground sirloin with either veal or pork.
