Ingredients

  • 3 chicken breasts (boneless and skinless)
  • 1 Tbsp. vegetable oil
  • 1 clove garlic, cut up or use minced garlic
  • 3 Tbsp. soy sauce
  • 1/2 c. celery, cut up
  • 1 can mushroom slices, drained
  • 2 c. frozen stir-fry vegetables
  • 1 Tbsp. cornstarch
  • 1/4 c. water

Method

  • Cut chicken into thin strips.
  • Heat oil in frypan.
  • Add chicken and garlic.
  • Cook, stirring constantly, until chicken turns white.
  • Add soy sauce and stir.
  • Add celery, mushrooms and stir-fry vegetables.
  • Cover and cook 4 to 5 minutes.
  • Mix cornstarch and water.
  • Add slowly to chicken mixture, stirring constantly.
  • Cook until ingredients are coated with a thin glaze, about 1 minute.
  • Serve with hot rice and extra soy sauce.
