Ingredients

  • 1 lb. ground beef
  • 3/4 c. chopped onions
  • 1 (16 oz.) can chopped tomatoes
  • 1 (15 oz.) can red kidney beans
  • 1/2 c. quick cook rice
  • 1 1/2 tsp. chili powder
  • 3 Tbsp. chopped green peppers
  • 1/2 tsp. garlic salt
  • 1/2 tsp. salt
  • 1/2 c. water
  • 3/4 c. shredded American cheese
  • 1 bag slightly crushed corn chips

Method

  • In skillet, cook ground beef and onions until meat is brown and onions are tender. Drain fat.
  • Stir in undrained tomatoes, kidney beans, then water, rice and green peppers.
  • Add chili powder, salt and garlic; bring to a boil, then reduce heat.
  • Cover and simmer 20 minutes.
  • Top mixture with cheese and corn chips. Serve when cheese is melted.
