Ingredients

  • 1/4 c. catsup
  • 1 tsp. dried oregano leaves
  • 1 tsp. wine vinegar
  • 1/2 tsp. onion powder
  • 1/4 tsp. sugar
  • 1/8 tsp. pepper
  • 2 English muffins, split and crisply toasted
  • 1/2 c. chopped pepperoni
  • 1/4 c. shredded Mozzarella cheese (about 1 oz.)
  • 4 tsp. grated Parmesan cheese

Method

  • Mix catsup, oregano, vinegar, onion powder, sugar and pepper. Spread 1/4 on each muffin half.
  • Top with 1/4 of the pepperoni. Place 1 tablespoon of Mozzarella on each muffin half.
  • Sprinkle with Parmesan cheese.
  • Place on single layer of paper toweling on carousel or on double layer of paper toweling on dinner plate. Microwave on High (100%) until cheese is melted and filling is heated through, 1 minute to 2 minutes and 15 seconds.
  • If using oven other than carousel, rotate plate and rearrange muffins after half the cooking time.
  • Cut each muffin half into 4 wedges. Yields 16 appetizers.
