Ingredients

  • 1/4 cup ketchup
  • 2 tablespoons light brown sugar
  • 1 tablespoon Dijon mustard
  • 1 1/2 pounds ground beef chuck
  • 1 cup plain bread crumbs
  • 1 cup canned tomato sauce
  • 1 large egg, lightly beaten
  • 4 teaspoons dried basil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper

Method

  • Line a broiler pan with aluminum foil and place it in oven. Preheat oven to 425°F. Whisk together ketchup, brown sugar and mustard in a small bowl and set aside.
  • In a large bowl, combine ground beef, bread crumbs, tomato sauce, egg, basil, garlic powder, onion powder, salt and pepper. Blend with your hands until well-combined. Divide into 4 equal portions and shape each into a mini loaf, about 4 inches long and 3 inches wide.
  • Brush each meat loaf with some ketchup mixture. Remove pan from oven and mist with nonstick cooking spray. Carefully transfer meat loaves to hot broiler pan. Bake until an instant-read thermometer inserted into center of a loaf registers 160°F, 20 to 25 minutes. Remove from oven and let stand on broiler pan for 2 to 3 minutes. Use a wide spatula to transfer each meat loaf to a plate. Serve immediately.
