Ingredients

  • 1 1/2 lb. lean ground beef
  • 1/2 tsp. salt
  • 1 egg
  • 1 can (8 oz.) tomato sauce
  • 1/2 tsp. Italian seasoning
  • 1 can (2.8 oz.) Durkee French fried onions
  • 6 small redskin potatoes, sliced thin
  • 1 bag (16 oz.) frozen broccoli, corn and pepper combination, thawed and drained

Method

  • Combine meat, salt, egg, 1/2 can tomato sauce, Italian seasoning and 1/2 can French fried onions.
  • In 9 x 13-inch baking dish, form 3 mini loaves.
  • Place potatoes around loaves.
  • Bake, covered, at 375° for 35 minutes.
  • Place vegetables around loaves; stir to combine with the potatoes.
  • Lightly season with salt and pepper, if desired.
  • Top meat loaves with remaining tomato sauce. Bake, uncovered, 15 minutes.
  • Top loaves with remaining onions; bake, uncovered, 5 minutes longer.
  • Makes 3 to 6 servings.
