Ingredients
- 1 1/2 lb. lean ground beef
- 1/2 tsp. salt
- 1 egg
- 1 can (8 oz.) tomato sauce
- 1/2 tsp. Italian seasoning
- 1 can (2.8 oz.) Durkee French fried onions
- 6 small redskin potatoes, sliced thin
- 1 bag (16 oz.) frozen broccoli, corn and pepper combination, thawed and drained
Method
- Combine meat, salt, egg, 1/2 can tomato sauce, Italian seasoning and 1/2 can French fried onions.
- In 9 x 13-inch baking dish, form 3 mini loaves.
- Place potatoes around loaves.
- Bake, covered, at 375° for 35 minutes.
- Place vegetables around loaves; stir to combine with the potatoes.
- Lightly season with salt and pepper, if desired.
- Top meat loaves with remaining tomato sauce. Bake, uncovered, 15 minutes.
- Top loaves with remaining onions; bake, uncovered, 5 minutes longer.
- Makes 3 to 6 servings.
