Ingredients
- 3/4 c. graham cracker crumbs
- 2 Tbsp. soft margarine
- 1 egg
- 1/2 tsp. vanilla
- 1 can pie filling containing cornstarch (cherry, apricot or blueberry have worked best for me)
- 8 oz. cream cheese
- 1/4 c. sugar
Method
- Mix crumbs and margarine.
- Put in cupcake papers and press down with bottom of a glass.
- Beat cheese, egg, sugar and vanilla until smooth.
- Pour over crumbs in cupcake pans.
- Bake at 375° for 10 minutes.
- Cool completely.
- Garnish with pie filling.
