Ingredients
- 2 nice-sized eggplant
- spaghetti sauce
- 16 oz. Mozzarella cheese
- Italian seasoned breadcrumbs
Method
- Slice eggplant, dip in egg, then in breadcrumbs; fry in oil. Drain well on paper towels.
- In a 13 x 9-inch casserole dish, layer ingredients: eggplant, cheese and sauce.
- Heat in oven at 425° until bubbly or cheese melts.
