Ingredients

  • 3 c. mixed dried beans (1/2 c. each: Great Northern, lima, red, pinto, pink and garbanzo beans)
  • 1/2 c. olive oil
  • 3/4 c. finely chopped onion
  • 2 cloves garlic, minced
  • 1/4 c. chopped parsley
  • 1 1/2 c. chopped celery and leaves
  • 2 (1 lb.) cans tomatoes, quartered, or can of paste
  • salt
  • 2 c. shredded cabbage
  • 2 c. finely sliced zucchini, carrots or turnips
  • 1/2 tsp. pepper

Method

  • Wash and drain beans.
  • Put in large, heavy kettle with 3 quarts water.
  • Bring to boil and boil 2 minutes.
  • Remove from heat, cover and let stand 1 hour.
  • Bring to boil, cover and simmer 1 1/2 hours or until tender.
