Ingredients
- 3 c. mixed dried beans (1/2 c. each: Great Northern, lima, red, pinto, pink and garbanzo beans)
- 1/2 c. olive oil
- 3/4 c. finely chopped onion
- 2 cloves garlic, minced
- 1/4 c. chopped parsley
- 1 1/2 c. chopped celery and leaves
- 2 (1 lb.) cans tomatoes, quartered, or can of paste
- salt
- 2 c. shredded cabbage
- 2 c. finely sliced zucchini, carrots or turnips
- 1/2 tsp. pepper
Method
- Wash and drain beans.
- Put in large, heavy kettle with 3 quarts water.
- Bring to boil and boil 2 minutes.
- Remove from heat, cover and let stand 1 hour.
- Bring to boil, cover and simmer 1 1/2 hours or until tender.
