Ingredients

  • 5 c. chopped lean meat
  • 2 1/2 c. chopped suet
  • 7 1/2 c. chopped apples
  • 3 c. liquor in which meat was cooked
  • 5 c. sugar
  • 3 c. cider
  • 1/2 c. vinegar
  • 1/2 lb. chopped citron
  • 3 c. raisins (seedless)
  • juice and grated rind of 2 lemons
  • juice and grated rind of 2 oranges
  • 2 Tbsp. cinnamon
  • 1 Tbsp. cloves
  • 2 Tbsp. allspice
  • 1/4 tsp. grated nutmeg

Method

  • Mix ingredients in order and let simmer over slow fire for 4 hours; stir often.
  • Pack in hot jars and seal at once.
  • Process 10 minutes.
  • Makes 6 quarts.
