Ingredients

  • 1 (7 to 8 oz.) pkg. thin spaghetti, cooked
  • 1/4 c. butter or margarine
  • 1 (4 oz.) can mushroom stems and pieces
  • 1 onion, chopped
  • 1 1/2 tsp. lemon juice
  • 1/3 c. flour
  • 1/2 tsp. salt
  • 1/8 tsp. nutmeg
  • 1/2 tsp. paprika
  • 2 c. turkey or chicken broth
  • 1/2 c. half and half
  • 2 1/2 c. turkey, cooked and cubed
  • 1 1/2 c. grated Parmesan cheese

Method

  • Put drained spaghetti in greased 12 x 8 x 2-inch microwavable pan.
  • In 2-quart casserole, microwave butter, mushrooms, onion and lemon juice on High for 2 to 3 minutes.
  • Stir in flour, salt, nutmeg and paprika until smooth.
  • Microwave on High for 1 minute; stir well.
  • Add broth; microwave on High for 5 to 6 minutes.
  • Add half and half and turkey; blend well.
  • Pour over spaghetti in pan; sprinkle cheese on top.
  • Microwave on High for 7 to 9 minutes, turning twice.
  • Serves 4 or 5.
