- 1 (7 to 8 oz.) pkg. thin spaghetti, cooked
- 1/4 c. butter or margarine
- 1 (4 oz.) can mushroom stems and pieces
- 1 onion, chopped
- 1 1/2 tsp. lemon juice
- 1/3 c. flour
- 1/2 tsp. salt
- 1/8 tsp. nutmeg
- 1/2 tsp. paprika
- 2 c. turkey or chicken broth
- 1/2 c. half and half
- 2 1/2 c. turkey, cooked and cubed
- 1 1/2 c. grated Parmesan cheese
Method
- Put drained spaghetti in greased 12 x 8 x 2-inch microwavable pan.
- In 2-quart casserole, microwave butter, mushrooms, onion and lemon juice on High for 2 to 3 minutes.
- Stir in flour, salt, nutmeg and paprika until smooth.
- Microwave on High for 1 minute; stir well.
- Add broth; microwave on High for 5 to 6 minutes.
- Add half and half and turkey; blend well.
- Pour over spaghetti in pan; sprinkle cheese on top.
- Microwave on High for 7 to 9 minutes, turning twice.
- Serves 4 or 5.
