Ingredients

  • 3/4 c. brown sugar, firmly packed
  • 1/3 c. safflower oil
  • 1/2 c. egg substitute
  • 1 tsp. vanilla
  • 3 bananas, mashed
  • 1/3 c. chopped walnuts
  • 1 1/4 c. all-purpose flour
  • 1/3 c. all-bran cereal
  • 3/4 tsp. baking soda
  • 1/2 tsp. salt

Method

  • Combine sugar, oil, egg substitute and vanilla in large mixing bowl.
  • Stir in bananas, nuts and remaining ingredients.
  • Pour into greased 9 x 5 x 2-inch loaf glass dish.
  • Cook in microwave oven on High for 6 to 7 minutes or until toothpick inserted in center comes out clean.
  • Let stand 5 minutes.
  • Turn out on cooling rack.
