- 3/4 c. brown sugar, firmly packed
- 1/3 c. safflower oil
- 1/2 c. egg substitute
- 1 tsp. vanilla
- 3 bananas, mashed
- 1/3 c. chopped walnuts
- 1 1/4 c. all-purpose flour
- 1/3 c. all-bran cereal
- 3/4 tsp. baking soda
- 1/2 tsp. salt
Method
- Combine sugar, oil, egg substitute and vanilla in large mixing bowl.
- Stir in bananas, nuts and remaining ingredients.
- Pour into greased 9 x 5 x 2-inch loaf glass dish.
- Cook in microwave oven on High for 6 to 7 minutes or until toothpick inserted in center comes out clean.
- Let stand 5 minutes.
- Turn out on cooling rack.
