Ingredients

  • 2/3 c. chopped onion
  • 3 Tbsp. bacon grease
  • 1 c. raw converted rice
  • 1 c. chopped green pepper
  • 1 tsp. chili powder
  • 1 (8 oz.) can whole tomatoes
  • pinch of sugar and salt

Method

  • In medium size heavy skillet (with tight fitting lid), saute onion in hot bacon grease. Stir in rice, green pepper, chili powder, tomatoes, salt and sugar.
  • Add 2 cups water. Bring to a boil, then reduce heat and simmer, covered, for 20 minutes or until liquid is absorbed and rice is done.
